Lemon and Ginger Cake - Kate Williams

Ingredients:
6oz plain flour
2oz oats
5oz soft brown sugar
6oz margerine
2oz broken walnuts
1 tspn baking powder
1 tspn ground ginger (or more if you like)
1/4 tspn ground nutmeg
2 large eggs
rind of 1 lemon

Method:
Cream together the sugar and margarine.
In a separate bowl, mix flour, oats, spices, and baking powder.
Add flour mixture alternately with beaten eggs to the margerine.
Add lemon rind and nuts.
Bake in a shallow greased tin for 35 mins. gas mark 4/180
Slowly heat juice of the lemon in a pan, dissolve in 3oz sugar, and pour over cake before eating.
